2 c All-purpose flour
3/4 c Unsweetened cocoa powder
2 c Granulated sugar
2 ts Baking soda
1 ts Baking powder
1/4 ts Salt
4 tb Buttermilk powder
1 c Water
2 Jars Pureed baby-food prunes
(4 1/2 oz each) 1 ts Vanilla
1 ts Almond flavoring
Or butter flavoring Egg substitute (equal to two whole eggs 1 c Water
Orange glaze; * see note Sift flour, cocoa powder, sugar, baking soda, baking powder and salt into large mixing bowl. In medium bowl, combine buttermilk powder, prunes, flavorings, egg substitute and water. Slowly pour moist ingredients into flour mixture, blending well. Spray 2 round 9-inch pans or one 9×13-inch rectangular pan with pan spray. Fill with batter and bake in preheated oven at 350 degrees for 30 to 35 minutes, or until cake tester comes out clean. There’s just one cup of water that you mix in with the buttermilk powder. I know the way it was written, it could be confusing. * Glaze For cake : 1 cup orange juice 2 cups powdered sugar 2 tsp grated orange peel Bring to a boil and pour over cake
while hot. Or if the cake has already cooled off, try this glaze 1 cup powdered sugar– 4 to 5 tsp. milk– 1 1/2 tsp. corn syrup -1/4 tsp. vanilla or bourbon whiskey. Combine and drizzle over cooled cake. Diana Hawkins —–
