Welcome to the weekend, my friends! All of my boys managed to catch a cold over the holidays, but thankfully, they all seem to be feeling a little better at the moment. There’s a lot of comfort food and hot soup on our menu right now and I’m here to enjoy every delicious bite.
We don’t put up our tree until later this year, so I’ll be happily enjoying the lights for a while longer. May this weekend be filled with what you love most, whether it’s a house freshly cleaned for Christmas or a house that still shines with the lights of the season.
ON OUR MENU THIS WEEK: Tonight’s dinner is the best ever. Green Chile Stew. It is loaded with small pieces of pork seasoned with onion and lots of garlic. The pork is simmered in a green chile sauce until it is tender enough to almost fall apart when you bite into it.
Baked Potato Soup It is my middle son’s favorite and when served with all the toppings and a warm loaf of bread, we all enjoy it. Everything you love about a fully loaded baked potato is included in this rich, creamy soup. There are fluffy bites of baked potato in every bite.
This Pasta with Cabbage and Sausage It’s one of the meals I’ve been craving the most over the past year, and it gets major bonus points for also being a lightning-fast dinner.
The first time I baked Sweet Potatoes in the Air Fryer It was a game changer for me. For the past few years, this has been my lunch at least once a month, if not more often. Sometimes I just cover the sweet potatoes with a little butter, other times I can fill them with taco meat either fill them with barbecue chicken.
As always, this unforgettable tomato soup and Crunchy and Gooey Grilled Cheese Sandwiches They frequently appear on our menu plan when everyone is home on a cold evening.
Roasted Sweet Potatoes and Brussels Sprouts with Bacon They are pure wonder from start to finish. Adding salty bacon and a splash of vinegar makes it a fantastic side dish, although most of the time I eat it as a full meal.
This easy chili to make It’s full of beans, tomatoes, corn, and lots of Mexican spices. I’ve made this chili with and without meat and it’s delicious both ways. My kids like to top their bowls with shredded cheese, sour cream, and a handful of fried foods.
If you see the ever popular Peanut Butter Balls (aka Buckeyes) waiting at a dessert table gets you excited, so these Sweet and Salty Chocolate Peanut Butter Bites and Pretzel Bliss They are going to be your new favorite.
What I long for: This Mississippi Pot Roast It’s on our meal plan for next week. I can’t even remember the last time I made a roast, so I’m looking forward to it.
My FAVORITE THING this week is this small rechargeable LED light which can be stuck to the wall anywhere you need it. We used to have these lights in the camper and now we have a cabinet here at home that is darker than I like, so I put one on the wall there. This provides the perfect amount of light for that space. (Side note: While these lights are technically rechargeable, I don’t remember ever needing to recharge one of them. We’ll see if this new one works as well as the previous ones.)
What I’m LISTENING: Untitled Hymn: A Collection of Hymns by Chris Rice. This is a lovely collection and has been a really nice transition from Christmas music to the start of the new year.
