4 cups cooked brown rice

1/3 cup melted butter

1 package frozen spinach — thawed (10 oz.)

1/4 cup chopped green onion

3 well beaten eggs — (3 to 4)

2 cups Velveeta shredded cheese

1/4 teaspoon Tabasco sauce

Pour over rice. Mix all ingredients and pour into a large lightly greased casse role dish. Bake at 325 degrees for 45 minutes. Let cool before cutting. Recipe from “One Million Recipes CD”
