1 1/2 c rolled oats
1/4 c sesame seeds
1/2 c whole wheat flour
1/2 tb salt
1/2 tb cinnamon
1/4 c finely minced nuts
1/2 tb vanilla
1/2 c sweet butter
3 tb honey
filling: 5 c sliced tart cooking apples
juice/rind of 1 lemon 1/4 c honey
2 tb unbleached white flour
1/2 tb cinnamon
1/4 tb nutmeg
1 egg
1/2 c sour cream
Crust: Combine oats, sesame seeds, whole wheat flour, salt, cinnamon, nuts & vanilla. Melt together butter & honey; add to crust ingredients & mix well. Press firmly into bottom & sides of 9″ pie pan. Filling: Combine apples with lemon juice & rind. Drizzle in honey. Toss gently till uniformly coated. Sift in flour, cinnamon & nutmeg. Toss again to coat. Distribute neatly into crust, covering crust completely. Beat together egg & sour cream; drizzle slowly over apples. Bake 35-40 min in 375 oven. Serves 8 Fat Free Crust: 1 box (6-7 oz) fat free cookies in fine crumbs (1 1/2 cups) Moisten fingers with water & press crumbs firmly & evenly into bottom & sides of 9″ pie pan.
