Sheila Drake 1 Unbaked 9″ pie shell

4 c Fresh, green apples

1 c Sugar

1/2 c Cornstarch

1 ts Lemon extract

1 ts Vanilla

3/4 c Pancake mix

2/3 c Sugar

1 Egg; beaten

1/4 c Melted butter

Peel and cut up 4 cups apples. Combine apples with 1 cup sugar, cornstarch, lemon extract, and vanilla, pour into shell. Top with mixture of pancake mix, 2/3 cup sugar, egg and melted butter. Bake for 35 minutes at 350~F. —–
