2 1/2 c PINTO BEANS

1/2 c DICED SPANISH ONION

1/3 c VEGETABLE OIL

1 1/2 tb CUMIN

1 1/2 tb GARLIC POWDER

1 tb CORIANDER

1/2 ts BLACK PEPPER

1 1/2 tb SALT

Wash beans and soak overnight in water. Drain and cover with water again bring to a boil, reduce heat to medium and cook beans until soft, about 1 hour. In a saute pan, saute the onions in the oil for 2 minutes. Add all spices, except salt and continue cooking till brown. When the beans are soft, add the salt and onion mixture to the beans.
