2 lb Red cabbage, finely shredded
8 ea Juniper berries, crushed
1/4 pt Boiling water
1 ts Salt
8 oz Onions, chopped
8 oz Apples, chopped
2 oz Soft brown sugar
1 ts Caraway seeds
1 ea Bag bouquet garni
1 tb Cornstarch
3 tb Malt vinegar
1 tb Cold water
Place red cabbage, junipers, 1/4 c boiling water & salt in a large pot. Bring to the boil, cover & simmer for 30 minutes. Stir in remaining water, onions, apples,sugar, caraway seeds & bouquet garni. Cover & cook gently for 1 1/2 hours, stirring frequently. Remove bouquet garni. Blend cornstarch with the vinegar & cold water till smooth. Stir into the cabbage & cook uncovered for 10 minutes.
