1 pastry shell — partially (9 inch)
baked 2 tablespoons minced green onions
3 tablespoons butter
1/4 pound cooked fresh shrimp — (1 c.)
crab & lobster combination 2 tablespoons Madeira
1/4 cup grated Swiss cheese
3 large eggs
1 cup heavy cream
1/4 teaspoon salt
1 pinch pepper
2 tablespoons white wine
Cook onions in butter 1 to 2 minutes. Add fish and stir 2 minutes. Add pepper a nd white wine. Raise heat and boil 1 minute. Allow to cool slightly. Beat eggs, cream and seasonings. Gradually add fish mixture. Pour egg-fish mixture into p astry shell and sprinkle with cheese. Bake at 375 degrees for 25 to 30 minutes. Serves 4 to 6. Recipe from “One Million Recipes CD”
