1 c Quaker Oats, uncooked
— (quick or old-fashioned) 1/3 c Grated parmesan cheese
1/2 ts Paprika
1/2 ts Salt (optional)
1/8 ts Pepper
1 Broiler-fryer chicken
— (2-1/2 to 3-1/2 lb), — cut up 1/3 c Milk
1/4 c Margarine or butter; melted
Heat oven to 375 F. Place dry ingredients in blender container or food processor bowl; cover. Blend or process about 1 minute, stopping occasionally to stir. Coat chicken pieces with oat mixture; dip into milk. Coat again with oat mixture. Place in 15×10-inch jelly roll pan; drizzle with margarine. Bake 55 to 60 minutes or until juices run clear when chicken is pierced with fork.
