2 1/2 c Flour

2 ts Pupmkin pie spice

1 1/4 ts Baking powder

3/4 ts Baking soda

3/4 ts Salt

1/2 c Butter or margarine; soften

2 c Sugar

3 Eggs

16 oz Libby’s Solid Pack Pumpkin

1/2 c Orange juice concentrate;

– thawed 1 tb Grated orange peel

———————————–GLAZE———————————– 1 c Powdered sugar

2 tb Orange juice

1/4 c Walnuts; chopped (opt)

Combine flour, pumpkin pie spice, baking powder, baking soda and salt in a small bowl. Beat butter and sugar in large mixer bowl until crumbly. Beat in eggs, pumpkin, orange juice concentrate and orange peel. Beat in flour mixture. Pour into greased and floured 13×9″ pan. Bake in preheated 350~ oven for 40-45 minutes or until wooden pick inserted in center comes out clean. Cool completely on wire rack. Spread Glaze over cooled cake; sprinkle with nuts. GLAZE: Combine 1 cup sifted powdered sugar and 2 tablespoons orange juice in small bowl; stir until smooth. —–
