Fritters: 1 egg
1 C. milk
3 Tbsp. sugar
2 1/2 Tsp. baking powder
1 C. crushed pineapple (drain and save)
2 Tbsp. butter — melted
2 1/2 C. flour
Sauce: 1 C. brown sugar
2 Tbsp. flour
2 Tbsp. butter
1 C. water
1 C. pineapple juice
1/2 lemon juice
Fritters: Combine in order given: egg, milk, sugar, baking powder, pineapple, butter and flour. Add pineapple to batter last. Drop a tablespoon at a time into hot deep fat. Sauce: Combine and cook until clear. Pour over fritters.
