1 qt Chicken stock
1 qt Water
1 lb Dried lentils
-washed and picked over 2 md Potatoes
-peeled and diced 2 md Onion(s), diced
2 lg Tomatoes, peeled
-seeded and quartered 2 lg Carrots
-peeled and diced 3 Garlic clove(s), minced
1 ts Dried oregano
1/2 ts Pepper
1/2 c Olive oil
Salt to taste
In a large pot, bring chicken stock and water to a boil. Add all the other ingredients at once.
Bring to a boil; continue boiling for 15 minutes. Then simmer over low heat for hour and it’s done.
