2 1/2 c All-purpose flour

1 c Sugar

1 ts Baking soda

2 1/4 ts Cinnamon

1/4 ts Ground nutmeg

1/8 ts Mace

1 Egg

2 Egg whites

1 ts Vanilla

1/2 c Applesauce

1/2 c Buttermilk

1 1/2 c Tart apples; dice

1/2 c Raisins

Brown sugar Sift together flour, sugar, baking soda and spices. In mixer bowl put egg, egg whites, vanilla, apple sauce and milk. Mix with electric mixer. Gradually add dry ingredients, blending well. Stir in apples and raisins by hand. Pour batter into 8×8 pan that has been sprayed with Pam. Sprinkle with brown sugar. Bake in preheated 350~ oven for about 50 minutes. Freezes well. Source: Laurie Cooks Light and Easy. —–
