If you’ve followed our site for a while, you know that we love Mexican food. This was an experiment that turned out great and the reviews prove it too. Many people love this recipe and it is super versatile. Tortilla chips are a wonderful addition and go together so well.

This is a versatile recipe; If you prefer, you can change the taco seasoning for fajita seasoning. You can also omit the cilantro if you’re not a fan of replacing it with fresh instead of dried. We love tortilla chips and think they add a great texture to this recipe. Use a sauce you like as a dressing.

Mexican Meatloaf
This Mexican meatloaf is the perfect version of a classic. It has wonderful reviews and is a wonderful weeknight meal!
- 2 pounds Ground meat
- 2 teaspoons chopped garlic
- 2 teaspoons dried coriander leaves
- 1/2 teaspoon black pepper
- 1 teaspoon salt
- A splash of hot sauce or Tabasco optional
- 1 tablespoon taco seasoning I used my recipe for homemade taco seasoning.
- 1/2 cup chopped green onion or normal onion
- 1/2 cup chopped red or green sweet peppers
- 1 cup frozen corn
- 2 10-ounce cans Rotel tomatoes with green chiles (well drained)
- 1 egg
- 2 mugs crushed tortilla chips or corn chips divided (I used toasted chips)
Mexican Meatloaf Topping:
- 1/2 cup dip
- 1/2 cup crushed tortilla chips
- 1/2 cup grated mexican cheese I used a finely shredded Fiesta blend which is a combination of Monterey Jack, Cheddar, Quesadilla Cheese and Asadero Cheese that came from Walmart.

In a large bowl, mix the ground beef with the minced garlic, cilantro, pepper, salt, hot sauce, and taco seasoning.

Add the onions, peppers, corn, drained tomatoes, egg and 1 1/2 cups crushed tortilla chips.

Form into a loaf and place in a baking dish (I used a 9 x 13). Bake in preheated 350 degree oven, uncovered, for 30 minutes. Remove and add salsa, crushed tortilla chips, and cheese on top of meatloaf. Increase the oven heat to 375 and bake for 35 more minutes uncovered. Makes 8 to 10 servings.
You can add a tablespoon of sour cream to the cooked meatloaf slices along with more sauce when serving.
