1 Tbls Olive Oil

2 Cloves Garlic — crushed

4 Chicken Breasts — boneless & skinned

1 1/4 Lb Fresh Mushrooms (Porcini) — julienned into 1/8

— inch strips 1 Cup Chicken Broth (Preferably Homemade)

2 1/2 Tsps Fresh Mint — chopped

1/2 Cup Parmesan Cheese — grated

1/2 Cup Heavy Cream — optional

In a skillet over medium high heat, add oil and saute garlic two minutes; add ch icken and saute five minutes on each side. Add julienned mushrooms, broth and fresh chopped mint. Cook, partially covered about 7 minutes, or until mushrooms are tender. Stir in cheese; cover and cook 3 minutes. Add cream and cook 2 minutes.
