1 1/2 cups fresh lobster

1/2 cup chopped green onions

2 tablespoons butter

1/2 teaspoon salt

1/4 teaspoon pepper

3 eggs

1 tablespoon tomato paste

2 cups medium cream

1/4 teaspoon nutmeg

2 tablespoons sherry

4 tablespoons shredded Gruyere cheese

1 pie pastry shell — (10 inch)

Saute onions 2 minutes in the butter, add salt and pepper. Break up lobster mea t into small chunks and mix with onions. Let sit. Beat the eggs and mix in the tomato paste. Scald the cream. Add nutmeg, and pour it over the eggs. Add the w ine and the cheese. Bake the Pastry Shell 8 minutes at 400 degrees; then arrang e the lobster meat on the shell and pour the cream mixture over it. Bake at 350 degrees about 30 to 40 minutes or until the filling is set to the liking. Reci pe from “One Million Recipes CD”
