2 ea Kiwifruit

2 c Strawberries

1 tb Orange juice; frozen

— concentrates mixed with — 1 tb water 1 ts Pine nuts, toasted

Peel kiwifruit and slice in thin rounds. Arrange on dessert plates. Wash, hull and slice the strawberries and arrange them over the kiwifruit. Drizzle orange juice over each dish and top with pine nuts. Betty Marks, “Light & Easy Diabetic Cuisine” Posted by Nancy O’Brion
