1 package Spinach — frozen-chopped (10
1 tablespoon Oil
1 pound Ground beef
1 Med Onion-chopped
1 Garlic — cloves/minced
1 pound Spaghetti sauce with mushroom
1 cup Tomato sauce (8oz)
1/2 teaspoon Salt
1/8 teaspoon Pepper
2 cups Macaroni-cooked
1 cup Cheddar cheese-shredded
1/2 cup Bread crumbs-soft
2 Eggs-well beaten
1/4 cup Oil
Cook spinach according to package directions – drain, reserving liquid. Add water to make l cup; set aside. Heat l tbsp. oil on medium high heat. Saute beef, onions and garlic. When lightly brown, add spinach liquid, spaghetti sauce, tomato sauce, salt and pepper. Simmer for l0 minutes. Preheat oven to 350 degrees. Combine spinach, macaroni, cheese, bread crumbs, eggs, l/4 c. oil. Pour this mixture into a greased l3x9x2 inch baking dish (I use two smaller round dishes in order to freeze one). Top with meat sauce. Bake for 30 minutes. Yeild l0-12 servings. Freezes great. One of my kids has an aversion to anything green, but he still likes this! Paula in IL
