Cookies: 1 1/3 c Brown sugar; frimly packed

1/2 c Butter or margarine; softend

1 Egg

1 c Apple;peeled; finely chopped

1/4 c Apple juice

2 c Whole wheat flour

1 ts Baking soda

1 ts Cinnamon

1/2 ts Salt

1 c Raisins

1 c Chopped nuts

Topping: 3/4 c Rolled oats

3/4 c Brown sugar; firmly packed

1/2 ts Cinnamon

1/3 c Butter or margarine; melted

Heat oven to 375 F. Grease cookie sheets. In large bowl, beat 1-1/3 cups brown sugar and 1/2 cup margarineuntil light and fluffy. Add egg; blend well. Beat in apple and apple juice. Lightly spoon flour int measuring cup; level off. Add flour, baking soda, 1 ts cinnamon and salt; mix well. Stir in raisins and nuts. In shallow bowl, combine rolled oats, 3/4 cup brown sugar and 1/2 ts cinnamon. Add 1/3 cup margarine, stir until particles are moistened. drop cookie dough by heaping teaspoonfuls 2 inches apart onto greased cookie sheets. Top each with 1/2 ts topping. Bake at 375 F for 8-12 minutes or until edges are golden brown. Cool 1 minute; remove from cookie sheets. 4 dozen cookies. —–
