2 cups cooked long-grain converted rice

3 cups peeled and grated carrots

2 cups grated sharp process cheese

1/2 cup milk

2 eggs — beaten

2 tablespoons chopped onion

1 teaspoon salt

1/4 teaspoon pepper

In bowl, combine all ingredients; stir well. Pour into greased Crock-Pot. Cov er and cook on Low for 7 to 9 hours or on High for 2 1/2 to 3 hours.

Serves 4 to 6

Double recipe for 5-quart Crock-Pot
