allow 6 to 8 oysters per serving 1 Pt. oysters

2 eggs

2 Tbsp. milk

1 Tsp. salt

1/8 Tsp. pepper

dry bread crumbs or cornmeal

Drain oysters and pat dry on paper towels. Make a batter by beating eggs slightly and stirring in milk, salt and pepper. Dip oysters in batter, then in fine dry bread crumbs or cornmeal. Saute in butter in a single layer or fry in deep fat heated to 375 degrees. Drain on paper towel. Arrange in a shallow baking pan in single layers. Bake at 400 degrees until browned, about 15 minutes.
