4 filet mignon steaks
–8 ounces each salt & freshly ground black pepper — to taste –pasilla chile bbq sauce– 1 1/2 cup new mexicostyle bbq sauce — recipe follows
2 tablespoons maple syrup
2 tablespoons pasilla chile powder
1/4 cup chopped cilantro
Mix all ingredients well and marinate filets for 1 hour. Prepare a wood or charcoal grill and let burn down to embers. Remove filets from BBQ sauce and cook on grill for 4 minutes on each side for medium rare. Copyright, 1997, TV FOOD NETWORK, G.P., All Rights Reserved
