4 filet mignon steaks — (8 ounces each)
Salt and freshly ground black pepper to taste Pasilla Chile BBQ Sauce Pasilla Chile BBQ Sauce: 1 1/2 cups New Mexicostyle BBQ Sauce
2 tablespoons maple syrup
2 tablespoons pasilla chile powder
1/4 cup chopped cilantro
Mix all ingredients well and marinate filets for 1 hour. Prepare a wood or charcoal grill and let burn down to embers. Remove filets from BBQ sauce and cook on grill for 4 minutes on each side for medium rare.
