4 salmon fillets — 1″ thick
1 tablespoon canola oil
1 teaspoon cajun seasoning mix — to taste
4 cups frozen seasoned spiral-cut french fries
1. Position racks to divide oven into 3rds. Preheat to 475 degrees.
2. Line 2 jelly-roll pans with foil (for easy clean-up)
3. Brush both sides of fish with oil; arrange in 1 of the prepared pans and spr inkle tops with Cajun seasoning.
4. Spread seasoned fries in other pan.
5. Bake salmon on upper oven rack, french fries on lower, 12-15 minutes or unti l fish is cooked through and fries are crisp.
