3/4 cup tomatoes — diced
1/2 cup red pepper — diced
1/2 cup scallions — chopped
2 tablespoons fresh coriander
1 lime
1/4 teaspoon ground cumin
1/4 teaspoon chili powder
1/4 teaspoon salt
3/4 cup black beans
1 pinch red pepper flakes
1 1/2 cups lettuce — shredded
2 tablespoons peanuts
2 flour tortillas
1. Combine tomatoes, red pepper, scallions, coriander and 2 tsp lime juice, lim e zest, cumin, chili powder salt and red pepper flakes. 2. Stir in black beans and set aside. 3. Warm tortillas one at a time in a hot skillet. 4. Top with shredded lettuce, spoon on tomato mixture and sprinkle with peanuts .
