2 cups croutons
2 cans salmon — drained (7 3/4 oz.)
2 tablespoons green pepper — chopped
5 eggs
1 teaspoon fresh parsley
2 cups milk
1 pinches nutmeg
1 pinches cayenne pepper
1/4 cup Mozzarella cheese — grated

Grease 9 inch pie plate. Spread croutons on the bottom. Distribute the fish ove r them and sprinkle with parsley and green peppers. Pepper to taste. Combine eg gs, milk, nutmeg and cayenne pepper. Blend with a fork. Pour mixture over fish. Garnish with cheese. Cook for 10 minutes at 425 degrees, then lower heat to 37 5 degrees and bake another 20 minutes or until golden brown and firm.
