2 cups cooked Chicken — diced
1 cup finely chopped celery
2 tablespoons minced onion
1/2 cup walnuts — coarsely chopped
3 hard-boiled eggs — sliced
1 can cream of chicken soup
3/4 cup mayonnaise — or salad dressing
1 tablespoon lemon juice
1/4 teaspoon pepper
2 cups potato chips — crushed
Preheat oven to 450 degrees. In large bowl combine all ingredients except potato chips. Mix well. Spoon into greased 2-qt casserole and top with potato chips; bake 15-20 minutes or until done.
