3 tbsp. butter

3 tbsp. flour

1 c. chicken stock

8 oz. Cheddar cheese — shredded

3 tbsp. cooking sherry

1/2 c. cream

14 oz. can mushrooms

2 c. flaked crab meat

Salt and pepper to taste

Melt butter in top of double boiler over direct heat, stir in flour, gradually add chicken stock and cream. Cook, stirring constant, until mixture is thickened and smooth. Remove from heat and stir over hot water, add cheese and stir until it melts, add mushrooms, sherry and crab meat. Let stand over hot water until serving time. Serve over rice
