1 1/2 cups chicken broth
1/2 cup each yellow, red and green bell peppers — in
strips 1×1/4″ 1 1/2 cups instant rice
1 1/2 cups cubed cooked chicken breast or turkey
1 tablespoon country style Dijon mustard
1 teaspoon honey
1/4 cup thinly sliced green onions with tops
Bring broth and peppers to a boil in a saucepn. Stir in rice. Cover and remove from heat. Let stand for 5 minutes, or until all liquid is absorbed.
