COOKIE CRUST: 1 1/2 Cups Chocolate Cookie Crumbs
2 tablespoons Granulated Sugar
6 tablespoons Butter — Melted
Filling: 8 ounces Cream Cheese — Softened
1/2 Cup Granulated Sugar
1 teaspoon Vanilla
2 Egg Yolks
1 teaspoon Unflavored Gelatin
1/4 cup Water
4 ounces SemiSweet Chocolate
1 cup Whipping Cream
Strawberries — for garnish
Preheat the oven to 350 degrees. Prepare the crust: Combine the chocolate cookie crumbs, sugar and melted butter. Press the mixture onto the bottom and sides of the pie pan (9″). Bake for 8 minutes. Allow crust to cool completely. Prepare the filling: Beat the cream cheese, sugar and vanilla until smooth. Beat in the egg yolks, one at a time, until well blended. Combine the gelatin and water in a small saucepan over low heat until the gelatin is dissolved. Cool slightly. Beat the gelatin mixture into the batter. Melt the chocolate. Combine half the batter with the melted chocolate. Whip the cream until it forms soft peaks. Fold half the whipped cream into the chocolate batter. Fold the remainder into the vanilla batter. Use a large spoon to place alternate spoonfuls of chocolate and vanilla batter into the crust until all has been used. Use a small spatula to swirl the batter to form a marble pattern. Chill for at least 3 hours. Garnish with strawberries.
