1 tb Vegetable oil

1/2 lb Shiitake mushrooms, stems

-removed and caps sliced 1 tb Finely chopped fresh ginger

1/2 ts Minced garlic

1 c Chicken broth

2 tb Soy sauce

1 1/2 ts Asian sesame oil

1/4 ts Freshly ground pepper

2 c Diced cooked chicken

1/4 c Sliced green onions

1 bn Spinach (10 oz.), washed and

-chopped 1 lb Spaghetti, cooked according

-to package directions

Heat vegetable oil in large skillet over medium-high heat. Add mushrooms; cook 5 minutes. Add ginger and garlic; cook 1 minute more. Add chicken broth, soy sauce, sesame oil and pepper; bring to boil and cook 1 minute. Add cooked chicken, green onions and spinach. Toss with hot pasta.
