2 tb Vegetable oil

1 lb Chicken, skinned, boned

-and cut into strips 1 md Green pepper,

-sliced lengthwise 1 md Onion, sliced lengthwise

1 c Diagonally sliced celery

1 Golden Delicious apple,

-cored and sliced 1/2 c Apple juice

1 tb White vinegar

2 ts Soy sauce

1 tb Cornstarch

Heat oil in non-stick skillet or wok. Saute chicken until no longer pink; remove from pan. Saute green pepper, onion and celery until tender-crisp. Return chicken to pan; add apple and cook for 1 minute. Combine remaining ingredients; add to apple mixture and cook until sauce thickens. 4 servings. Fat 14 grams per serving / Fiber
