8 eggs

1/2 cup cottage cheese — creamed

1/2 cup cream cheese — softened

pinch salt 2 packets sugar substitute

1 teaspoon vanilla

1/2 teaspoon cinnamon

1/4 cup cream

3 tablespoons butter

2 tablespoons sour cream — optional/topping

Combine all ingredients except butter and sour cream in a bowl. Beat til smooth. Melt butter in large nonstick omelet pan or skillet. See Basic Omelet recipe and followdirections for cooking. Serve plain or top with sour cream. Total Grams- 4.2g
