———-DRESSING———- 1 ea Garlic clove, minced
Juice of 1 lemon 1 ts Balsamic vinegar
2 tb Sambuca liqueur
2 tb Fresh basil, chopped
1 ts Black pepper
———–SALAD———— 2 c Cooked black eyed peas
1/2 ea White onion, chopped
1/2 ea Red bell pepper, diced
1/4 c Chopped fresh basil
Combine ingredients for dressing. Mix with sald ingredients & rest at least half an hour before serving. Season if desired. Adapted from “The Hamilton Spectator” August, 1993
