1 lb extra lean ground beef

1 c onion

2/3 c barley — uncooked

2 c beef broth

2 tsp oregano — fresh

1/4 tsp salt

1/4 tsp black pepper

1 16 oz whole tomatoes

8 oz waterchestnuts, sliced

1 c carrot — sliced

1 c green pepper — chopped

Preheat oven to 350F. Cook beef and onion. Mix with remaining ingredients and place in 3 quart casserole dish. Cover and bake for 1 hour or until barley is tender.
