3 Eggs
1/2 c Shortening
1 1/2 c Sugar
1 c Mashed bananas
1/2 ts Soda
1/4 c Buttermilk (or sour milk)
2 1/2 c Cake flour
2 ts Baking powder
1/2 ts Salt
1/2 ts Vanilla
Cream shortening and sugar. Add eggs one at a time and beat well after each addition. Combine bananas, soda, vanilla and milk and add to creamed mixture. Sift flour with baking powder and salt and add to the mixture. Pour into two greased 8-inch round cake pans and bake at 350 degrees for 45 minutes. Frost.
Banana Frosting: 1/2 cup mashed bananas 1/2 teaspoon lemon juice 1/4 cup butter 3.1/2 cups
