1 c yellow cornmeal
1 c all-purpose flour
1 tb baking powder
1 ts sugar
1 ts salt
1 ts pepper
2 lg eggs, lightly beaten
3/4 c milk
1/4 c vegetable oil
1/2 c chopped onion

Combine first 6 ingredients in a large bowl. Make a well in the center and set aside. Combine the remaining ingredients. Add to dry mixture. Stir until moistened. Coat miniature- muffin pans with cooking spray. Spoon 1 tablespoon batter into each cup. Bake at 425?F for 15 minutes. Remove from pans and serve immediately.
