5 egg — hard boiled
5 slices bacon — cooked and crumbled
1 tomato — seeded and chopped
1 green onion — chopped
1/4 cup mayonnaise
1 Tablespoon creole Mustard
salt and pepper hot sauce — to taste 8 slices whole wheat bread
1. Hard boil eggs. 2. Cook, drain and crumble bacon 3. Place eggs in mxing bowl, break up with a fork. Add remaining ingredients and mix well. 4. Season to taste with salt, pepper and hot sauce 5. Refrigerate to allow flavours to blend.
