1 c Chopped dates

1/2 c Amaranth

1 c Boiling water

2 Eggs

1/2 c Honey

1/4 c Butter, melted

2 c Whole wheat flour

2 ts Baking powder

1 c Chopped pecans

1 ts Vanilla extract

Soak dates and amaranth in boiling water. Beat eggs well, add honey and butter; beat well. Stir in all remaining ingredients mixing well. Pour into an oiled loaf pan. Bake at 350 F for 1 hour and 15 min. From Arrowhead Mills Posted by Theresa Merkling. —–
