1 3/4 c Flour

2 ts Baking powder

1/2 ts Salt

1/2 ts Cinnamon or 3/4 tsp

3/4 c Orange juice

1/2 ts Grated orange rind or 3/4 ts

1/2 c Minus 1 tb vegetable oil

1 Egg

1/2 c Chopped walnuts

1/2 c Raisins

Preheat oven to 375 F. Combine dry ingredients. Add remaining ingredients, mix well. Drop by teaspoon on ungreased cookie sheet to make 32 cookies. Bake about 10 to 15 min. Remove from pan and cool.

VARIATIONS: Add 1/4 tsp ground cloves for a spicy cookie. Instead of raisins, add 1/2 cup chopped or whole cranberries. 2 cookies/serving – 161 calories, 1 starch/bread, 1 1/2 fat exchange
