4 cooking apples — medium-tart

1/2 C brown sugar

1 Tb lemon juice

1 C light sour cream

2 eggs — lightly beaten

1/2 T vanilla

1 Pinch salt

pie shell (9-inch) — topping 1/4 C butter or margarine — softene

1/4 C sugar

1/4 C almonds — sliced

Preheat oven to 350F. Peel and core the apples; thinly slice. In a large bowl, combine the apple slices, sugar, lemon juice, sour cream, eggs, vanilla, and salt. Mix well and set aside. Bake empty pie shell for 5 minutes, then fill with apple mixture and bake for 35 minutes. Meanwhile, mix margarine or butter with sugar and almonds until smooth. Set aside. Remove pie from oven.
