2 cups crushed graham crackers
4 tablespoons sugar
1/2 cup melted butter
1 teaspoon cinnamon
—filling— 1 cup sugar
1/8 teaspoon salt
3 eggs — separated
1/2 cup lemon juice
4 tablespoons cornstarch
1 pound cottage cheese
grated rind of 1 lemon 1/2 teaspoon vanilla
1. Mix together crushed graham crackers, sugar, melted butter and cinnamon. Pr ess on the bottom and sides of a 10 inch springform pan.
2. Combine the sugar, salt and egg yolks and beat until light.
3. Mix together the lemon juice and cornstarch. Add to the egg mixture.
4. Add the cheese and cook in the top of a double boiler over simmering
water until thick, stirring constantly. Remove from heat and cool.
5. Add the lemon rind and vanilla; mix well.
6. Beat the egg whites until stiff and gently fold into the mixture.
7. Pour into the crust and place in the refrigerator until firm. Serves
