3 lg eggs
2 cups sugar
1 cup oil
2 ounces baking chocolate
1 teaspoon vanilla
2 cups zucchini — grated
1 teaspoon cinnamon — or more
1/4 teaspoon baking powder
1 teaspoon baking soda
1 cup chopped nuts — or more
3 cups flour
1 teaspoon salt
Beat eggs til yellow. Beat in sugar & oil. Melt chocolate. Stir into egg mixture. Sift flour with salt, cinnamon, baking powder & soda. Stir into well oiled pans – angel food or 2 9×5 loaf pans. Bake 350 for 1 hour 30 minutes [START WITH LESS TIME). Cool in pans for 5 to 20 minutes. Turn out on rack and cool.
