1 1/2 teaspoons baking soda

1/2 cup boiling water

5 tablespoons thick applesauce

1/4 cup brown sugar or honey

1 egg beater or egg replacer — equiv to 1 egg

1 cup milk — skim, soy,rice,tofu

1 tablespoon lemon juice

1 cup whole wheat flour

1/4 teaspoon salt

1 can bran cereal

1/2 cup bran cereal with raisins

1/2 cup chopped dates

Add baking soda and water (boiling water) and stir. Set aside to cool. Preheat oven to 375 degrees. In large mixing bowl combine all ingredients and mix well. Allow to stand until dry ingredients absorb some liquid. (about 5 minutes.) Spoon into muffin tins that have been sprayed with a cooking spray. Bake 25 minutes or until done. Can use regular size muffin tins or the mini ones. These muffins freeze well after they are baked and cooled. Recipe shared by Cinda Sanner.
