1/2 pound hops

1 gallon water

1/2 pound fine malt powder

1/2 pound brown sugar

As Dad used to say, “Ja wohl, to pbegin der yeast…”

In one gallon of water boil the hops for half an hour. Strain and stir in the m alt flour. Then strain this mixture through a coarse cloth and boil for about 1 0 minutes. Let the mixture rest until lukewarm, then stir in the brown sugar. R emove mixture to a jug and keep in a warm place for working. Cap tightly and st ore in a cool place for future baking use.
