1 Stick (1/2 cup) butter or
-margarine, at room temp. 1 c Confectioner’s sugar
1 lg Eggs
1 ts Lemon peel; freshly grated
1 cn (20 oz) apple slices;
-drained 1/2 c Golden raisins
1 ts Ground cinnamon
For garnish: Confectioner’s sugar Heat oven to 350~ F. Grease an 11×7-inch baking pan. Mix flour and baking powder. In a large bowl, beat butter and confectioners’ sugar with electric mixer until pale and fluffy. Beat in egg and lemon peel. With mixer on low speed, gradually add flour mixture. Remove 2/3 cup dough. With floured fingers, pat remaining dough over bottom of prepared pan. Spread apple slices mixed with golden raisins and ground cinnamon. Spread over dough, using a rubber spatula to break up apples if needed to cover dough. Roll remaining dough into long ropes and lay diagonally across filling to create a lattice effect. Bake 30 minutes or until top is golden brown. Cool in pan. Dust with confectioners’ sugar before cutting.
