1 tablespoon sesame seeds
2 teaspoons vegetable oil
3/4 pound turkey breast cutlets — cut into
— 1-inch-wide strips 2 cloves garlic — finely chopped
4 cups broccoli florets
6 green onions — cut into 1 1/2-inch
— lengths 1/2 cup reduced-sodium chicken broth
1 tablespoon soy sauce
1/8 teaspoon hot red pepper flakes — (optional)
4 cups lettuce — shredded
1. In a large nonstick skillet, heat sesame seeds over medium heat, shaking pan and stirring often until seeds are just golden brown. Remove seeds from pan to a small bowl and set aside.
2. In the same skillet, heat oil over medium-high heat. Add turkey and garlic; cook 2 minutes, or until lightly browned, stirring constantly. Add broccoli, green onion, chicken broth, soy sauce, and pepper flakes, if using. Cook 3 minutes, or until broccoli is tender-crisp, stirring often.
3. Meanwhile, arrange lettuce on a serving platter or divide among individual plates. Top with the turkey mixture, sprinkle with sesame seeds, and serve immediately.
Notes: For a fiber boost, serve this dish with whole wheat pasta, or the usual white or brown rice, instead of shredded lettuce. Downloaded 09/07/98 from http://homearts.com/dynamo/main.jhtml?/58hear36.htm and formatted for Mastercook by K. Hudson Lipin
