2 c Flour

3 ts Baking powder

1 t Salt

1/8 ts Cloves

1/4 ts Nutmeg

1 c Shredded, pared apple

2/3 c Brown sugar or maple syrup

1/2 c Chopped walnuts

2 ea Eggs, beaten

2/3 c Apple juice

1/4 c Butter, melted

1 c Bran flakes

Sift together flour, baking powder, salt and spices. Stir in apple, brown sugar and nuts. In a separate bowl, combine eggs, juice and butter. Stir into apple mixture just until blended. Fold in bran flakes. Pour into oiled muffin pans, filling each cup about 2/3 full. Bake at 400 degrees for 15-20 minutes. Makes 12 muffins
