1 Basic Regular Pie Crust
1/4 Lb. Swiss or Cheddar cheese — (1/4 to 1/3)
1 Pt. asparagus
dill weed tarragon 3 eggs — (3 to 4)
paprika 1 1/2 C. milk
Basic Regular Pie Crust: 1/4 C. cold butter — (half stick) cut
into pieces 1 C. flour
1 Dash salt
up to 3 Tbsp. cold water — milk or buttermilk
Grate or cube cheese and place on bottom of unbaked pie crust. Place chopped and steamed asparagus over cheese layer. Sprinkle with a little dill weed and tarragon. Beat together 3 eggs (4 eggs if using quiche pan), milk and pour over top. Dust with paprika. Bake 35 to 40 minutes at 375 degrees. Variations: Sour cream or buttermilk instead of milk. Crust: Makes single crust. Cut ingredients together. Roll and shape to fit pan. Use with asparagus quiche recipe.
