4 pita bread

2 Tablespoons butter

2 Tablespoons chopped onion

1 clove garlic — minced

2 Tablespoons minced green pepper

1 pound ground beef

1 Tablespoon prepared mustard

1/2 teaspoon oregano

1 teaspoon salt

freshly ground black pepper 1 1/2 cups peeled, seeded and chopped tomatoes

Heat the bread in a low oven. Heat the butter in a skillet and saute’ the onion, garlic and pepper until just soft; do not brown. Add the beef, mustard, oregano, salt and a generous amount of pepper. Cook, stirring, until the meat is no longer red. At the last minute stir in the chopped tomatoes and cook briefly. Cut the pitas in half and stuff the pouches. Makes 4 generous servings.
